Fermentum – Engenharia das Fermentações, Lda. is a spin-off of the University of Minho. The company offers engineering solutions in the field of fermentations through the development and implementation of fermented and distilled beverages in the market and provides support and consultancy in the brewery sector.
He holds a Master’s Degree in Biological Engineering from the University of Minho. He is a Beersommelier i.e., specialist in beer production and service. Developed competences in fermentation, enzymatic engineering, food safety, microbiology, food science, food biotechnology, continuous fermentation of non-alcoholic beer, gastronomic harmonization, drink taster. He enjoys futsal or crossfit, and is always surrounded by friends. The beach and the mountain provide him with the rest needed for his professional activity.

What was the most difficult?
In addition to the financial aspect, it was difficult to attract partners with a vision of the future. It was difficult, especially when there was no reference in the craft beer sector in Portugal.
He holds a Master’s Degree in Biological Engineering and a PhD in Chemical and Biological Engineering from the University of Minho. Francisco specialises in: brewing technology, fermentation processes, yeast physiology, high gravity technology for bio-ethanol and brewing processes and food biotechnology. He enjoys cinema, socialising and playing sports with friends and travelling the world.
